2021

Wow, it has been a minute! I would like to get back to posting, and share more of our gluten free journey with the world again, so here goes!

After getting sick every few months thanks to an errant mystery crumb, we decided our entire household of 5 would go gluten free for me when we moved across the country. Well, here we are 1 month into it and the only time I got glutened was when non gf takeout was brought into the house and a crumb found its way into my Mac and cheese.  It's been an expensive journey to feed my guys and mom gf with me, but they are shockingly ok with it, and I am finding new foods I like because I am searching with them.

We are in an airbnb this month and next, and then will be in our new home in mid coast Maine. The new house has a Jenn Air down draft oven that is absolutely trashed, and I want a hood and a gas oven... so we will be without an oven for awhile. I'm trying to look at it like camping without the bugs heh. So, we will be relying on the instant pot and crock pot for most meals, and maybe I'll grab a portable grid for boiling stuff?

Our current fave foods are various flavored chex, scrambled eggs in a wrap (we like the mission gf ones), lots of canyon bakehouse hawaiian heritage bread for sandwiches, glutino English muffins, snyders gf pretzels, pop corners kettle chips, harvest snaps and pops, glutino fruit bars, nips candies and dum dums, and for dinners we are enjoying the basics thanks to a subpar oven at the rental! Teriyaki chicken, sesame beef, black bean chili, chicken salsa, chicken alfredo (ronzoni and barilla are the best, with classico sauce yum), chicken zucchini casserole, spaghetti with meatballs (cooked perfect gf meatballs are AWESOME and so easy), burgers (schar buns are borderline too soft, but udis are perfect), and evol frozen dinners for the occasional man left out when we cook foods we don't all love.

If you have celiac questions, brand questions, want recipes, etc, please reach out to me or comment here! I have been a diagnosed celiac since 2006, and am very sensitive to the tiniest bit of gluten.
